Summer Grilled Chicken

I love cooking on the grill in the summertime. I found this recipe for a spicier grilled chicken with a fruit salsa and we loved it. The sweetness of the fruit was paired perfectly with the spices. The following ingredients are needed:
1 tsp oregano

1 tsp EVOO

1/2 tsp chili powder

1/3 tsp ground cumin

1 clove garlic, minced

1/4 tsp salt

2 boneless skinless chicken breasts



1 cup cubed, seeded watermelon

3/4 cup cubed cantaloupe

1/8 cup finely chopped red onion

1 finely chopped and seeded jalapeno (I usually use a serrano pepper-it's a tad hotter)

1 tsp lime juice

1/4 tsp sugar

1/8 tsp salt



Combine first 6 ingredients in a large ziplock bag. Add chicken to bag and seal. Marinate in fridge for 30 minutes to 4 hours, turning bag occasionally.



Grill chicken. While grilling, combine remaining ingredients to make the salsa. Top the grilled chicken with the salsa and enjoy!



We enjoyed this with some summer squash and green beans, both from our vegetable garden in the backyard. This was a great fresh summer meal.
