
Tonight Michael's dad came over for dinner, so I immediately knew I would make salmon, his favorite. I found this new recipe that looked great and it did not disappoint. It has an Asian flair to it. I have it altered for 3, but there was enough marinade to have 4 pieces. (This was a little over a pound). Also, I bought a long piece and cut it into three pieces. I removed the skin before cooking it. We had it with white rice and green beans and a small side salad (not shown).
Salmon fillets
1/4 cup brown sugar, divided
1.5 tsp lemon pepper, divided
1/4 cup soy sauce
3/4 tsp garlic powder, divided
2 1/4 tsp olive oil
1 Tbsp minced fresh ginger root
1/4 cup orange juice
Rub salmon with 1 Tbsp of the brown sugar. Lightly sprinkle with lemon pepper and garlic powder. Rub into fish. In a small saucepan over low heat, combine soy sauce, olive oil, ginger, and remaining brown sugar, lemon pepper, and garlic powder. Bring to a gentle simmer, stirring constantly until sugar dissolves. Remove from heat and stir in orange juice. Place fish and marinade in resealable bag and refrigerate at least 3 hours (could do overnight). Place fish on foil lined baking sheet and cook at 350 for 20-30 minutes (depends on thickness of fillet).
