Taco Tuesday

Last night we had fish tacos for dinner. We eat Mexican food a lot because it's so fast and we love it! I usually prefer to grill a fish like tilapia for the tacos, but I decided I would make them crunchy last night. Here's the recipe for frying the fish:
1 piece of cod (0ther white fish will work)

*cut into strips

1/2 cup plain flour

1/4 tsp cumin

1/8 tsp pepper

1/2 tsp salt

1/2 cup light beer

vegetable oil

Heat vegetable oil in pan over medium high heat. Mix dry ingredients together. Whisk in beer until smooth. Coat each piece of fish in batter and then place in oil. Cook each side until golden, about 4-5 minutes each.

Use whatever fillings you want in the tacos. We squeezed lime juice on the fish and added a little cheese, chopped tomatoes, chopped onions, chopped avocado, and shredded lettuce. Michael also added salsa to his.
