Pumpkin Loaf

I have made a pumpkin chocolate chip loaf, but my friend Elizabeth passed this to me and I thought it looked like a different way to make a pumpkin bread (it uses vanilla pudding). It looked moist and wonderful and it did not disappoint! It makes 2 loaves, so plenty to share! I'll be eating this as a breakfast treat for the next several days. Another wonderful recipe from Elizabeth!!

1 1/4 c. vegetable oil
1 (15 oz) can of pumpkin puree
5 eggs
2 (3 oz) packages of cook and serve vanilla pudding
2 cups flour
2 cups sugar
1 t. cinnamon
1/2 t. salt
1 t. baking soda

Mix dry ingredients in 1 bowl. Mix oil, pumpkin, and eggs in another bowl. Add dry to wet ingredients. Pour into 2 bread pans and bake at 325 for 1 hour and 5 minutes to 1 hour and 15 minutes (mine was perfect right at 1 hour, 10 minutes).

  1. I just have the instant vanilla ....will that work?? you just poor it in dry?

  2. I don't know if that will work...Yes, you pour it in dry. Makes it mosit and yummy!
