BBQ Sandwiches, Spicy Collards, Raw Fries

Here's a new year's themed meal; with the pork and collards. I used the pickled red onions that I make for the poblano burgers on this BBQ sandwich and it was a great flavor combination. I made some raw fries and these spicy collards.

4 cups collard greens cleaned and washed
2 tsp olive oil
1/4 cup diced onion
1/4 cup diced bacon
1 tsp crushed garlic
1 Tbsp brown sugar
1/2 cup chicken broth
salt and pepper to taste

In a large pot, place olive oil and onion. Add bacon and cook until crispy. Add collards and sauté for a few minutes. Mix in crushed garlic, broth and sugar. Allow greens to get tender for five minutes. Add salt and pepper.

The first time I made these, I also added 1/4 cup sweet and spice plum sauce; but this time I did not have any. It definitely gives them some more flavor.
