Shrimp Scampi





shrimp, peeled and deveined


salt and pepper


olive oil


1 small onion, thinly sliced


2 Tbsp chopped garlic


juice of 1 lemon


1/2 cup white wine


1/2 cup chicken broth


2 Tbsp cold butter


angel hair pasta




Season shrimp with salt and pepper. Heat large saute pan over medium/high heat. When pan is hot, add enough olive oil to lightly coat the pan (about 1 Tbsp). Add shrimp and quickly saute until just starting to turn pink, but not cooked through. Remove shrimp from pan and set aside. Add onions and saute about 3 minutes. Add garlic and cook another 30 seconds. Add lemon juice, white wine, and broth and reduce by 2/3, about 5 minutes. Add shrimp back to pan and swirl in butter. Serve over angel hair pasta.




I think these are great alone too if you want to serve with seasonal veggies and rice or pasta on the side. So quick, easy, and good!
