a healthier lasagna




1/2 lb lean ground beef



1/2 tsp dried oregano



black pepper



2 cups marinara sauce-I used the whole jar which was over 2 cups



1 cup ricotta cheese



1 Tbsp grated Parmesan



4-5 no boil lasagna noodles



1 zucchini, sliced thin





Coat a large pan with 1 tsp olive oil and heat to medium. Brown ground beef with oregano and pinch of black pepper. Add marinara sauce and simmer. Remove pan from heat. Mix both cheeses in a bowl. In a 9 x 5 baking dish (loaf pan) layer ingredients, starting and ending with sauce, sandwiching noodles, cheese, and zucchini in the middle. Cover with foil and bake at 350 for 45 minutes. Uncover and bake an additional 15 minutes.





This is a much healthier alternative to traditional lasagna and we liked it better! I love that it just makes the right amount. We ate about 1/2 of it, so perfect for 2 people with leftovers another night.
