Spicy Honey Glazed Pork Tenderloin and Brown Rice

boneless pork tenderloin
salt and pepper
1 Tbsp vegetable oil

for glaze:
*this is enough for two pork loins, I usually cut it in half for one
3/4 cup honey
1/3 cup lime juice
2 chipotle chiles in adobo sauce, minced
1.5 tsp cumin

Heat oven to 375 degrees. Pat pork dry with paper towels then season with salt and pepper. Heat oil in medium skillet over medium high heat. Brown pork on all sides, about 10 minutes. Transfer to a baking dish.

Mix ingredients for glaze together. Pour over pork and place in oven.
Roast in the oven until the thickest part registers 135 degrees, turning over half way through cooking time. This was about 30-40 minutes for me, but I used a small one. Transfer to a carving board, tent with foil and let rest until pork reaches internal temperature of 145-150 degrees, about 10 minutes.

Browning it on the stove first then placing it in the oven really makes this pork wonderful! It's my favorite way to cook a tenderloin.

Brown Rice:
1 cup rice
3/4 stick butter
2 cans beef consume soup

Melt butter in 2 Qt dish in oven at 350 degrees. Add soup and rice and cook for 45-50 minutes. So easy, but so good...
