I saw this recipe in Men's Health and I am not a cole slaw eater, but something told me to give this a go. I am so glad that I did! It doesn't have mayo in it, which I loved!
1 head of cabbage, thinly sliced
1 medium red onion, thinly sliced
1 large carrot, grated
2 Tbsp grated ginger
pinches of salt (I didn't use any)
1/4 cup rice wine vinegar
3 Tbsp olive oil
1 Tbsp red pepper flakes
chopped cilantro
Combine the first 5 ingredients and let stand for 10 minutes. To make the dressing, whisk together the remaining ingredients. Toss with the vegetables. Ready to eat immediately.
