Whole Grain Cinnamon Rolls

Another to die for recipe from Elizabeth! These are a wonderful breakfast treat!
for the dough:
2 cups milk

4 1/2 Tbsp butter

1/2 Tbsp vanilla

1/2 cup quick rolled oats

4 cups whole wheat flour

1/4 cup sugar

1 3/4 tsp salt

3 3/4 tsp yeast



Combine the above ingredients in the bread machine. Set to dough cycle and let it run. When the dough is ready, roll out on a lightly floured surface until you have a 12 x 15 inch rectangle (mine was a little bigger than this).



for the filling:

3 1/2 Tbsp butter (the remainder of the stick)

3/4 cup dark brown sugar

1 Tbsp cinnamon



Spread butter over surface. In a small bowl, combine brown sugar and cinnamon. Sprinkle over butter. Roll up dough, jelly-roll fashion starting from the long edge and pinch the seam to seal as you roll. Slice into 12 equal portions and arrange on a baking sheet. *I pulled two out and covered them with foil and placed them in the refrigerator. I froze the remainder so I can pull them out for just the two of us as we want them. For the frozen ones, just pull them out the night before and allow to thaw in the refrigerator.



In the morning, remove the rolls and allow to rest at room temperature for 20 minutes. Preheat oven to 350. Bake rolls until browned, about 20-30 minutes. Remove from oven and cool on a wire rack. Glaze with icing.



for the icing:

3/4 cup powdered sugar

1-2 Tbsp milk

Combine in a mixing bowl. Stir with a wooden spoon until combined.

*This is enough for all of them, so I just used a little powdered sugar and a dab of milk to make enough for the two of us. My icing was a little thin, so note that you just need a tiny but of milk.
