Lasagna


This is a classic lasagna recipe from my friend Lauren. As it's getting colder outside, warm meals like this just feel right. It freezes well and reheats well. You can't beat it.

8 oz (1/2 package) lasagna noodles, uncooked
15 oz ricotta cheese
2 cups mozzarella cheese
1/2 cup parmesan cheese
2 eggs
2 jars pasta sauce
1 lb ground beef, cooked and drained

In a medium bowl, combine ricotta cheese, 1 cup of the mozzarella cheese, parmesan cheese, and eggs. Mix well. In a separate bowl, add browned meat to pasta sauce. Mix well. Spread 1/3 of the meat sauce mixture in a lasagna dish, covering the bottom. Place 1/3 of the noodles over the sauce. Spread 1/2 of the cheese mixture over the noodles. Top with 1/3 of the meat sauce mixture. Repeat layering. Cover with foil. Bake 55 minutes. Uncover, sprinkle remaining cheese on top. Bake an additional 5 minutes, or until cheese is bubbly.
