Sweetfire Chicken

Here's a guest post from Alisa that I will definitely have to try soon!  Looks right up our ally in the Long house!


2-3 chicken breasts, cut in 1" chunks
1 cup flour
2 Tbsp cornstarch
1/4 tsp cayenne pepper
Salt & pepper
3/4 red pepper sliced
1/2 small onion Sliced
1 1/2 cups fresh pineapple chopped
1/2 cup Thai sweet chili sauce
Vegetable oil

Chop all ingredients.  Heat oil in pan. Mix flour, cornstarch, cayenne pepper, and salt and pepper in a large ziplock bag. Add chicken and coat evenly. Once pan is heated add chicken; cook about 5 mins. Once chicken is browned remove and set aside.  Add bell pepper & onions to pan and stir fry 3-4 mins. Add sweet chili sauce & stir. Immediately add cooked chicken and pineapple. Cook 2-3 mins. Serve over rice
