Sausage and Cheese Calzones


I thought these looked really good and I was very pleased with them!  The bread on them is thin, so it doesn't make you feel bloated afterwards.  It's the perfect amount of food, especially if served with a salad.  I found a recipe that said it fed 8, so I halved it and here's my altered recipe:

8 whole, frozen unrisen dinner rolls
1/2 Tbsp butter
1/2 medium onion, diced
1/2 lb sausage
1/4 tsp Italian seasoning
1/4 tsp red pepper flakes
8 oz ricotta cheese
1/4 cup grated parmesan cheese
3/4 cup grated mozarella cheese
1 egg
1/4 tsp salt
black pepper, to taste
1 Tbsp chopped fresh parsley
1 whole beaten egg (for egg wash)

Place frozen rolls on a baking sheet and cover with a tea towel to thaw ans rise (2 hours).  Melt butter in large skillet over medium-high heat.  Cook onion in butter for a couple of minutes.  Add sausage and brown. Add Italian seasoning and red pepper flakes.  Remove from pan and allow to cool on a plate.

In a bowl, combine cheeses, egg, salt, pepper and parsley.  Stir in the cooled sausage.

When rolls are thawed and risen, roll them out on a lightly floured surface until paper thin.  Spoon about 4 Tbsp filling into half of the dough circle.  Fold half of dough over itself and press edges to seal.  Brush with beaten egg and cook at 400 degrees for 10-13 minutes, until golden brown.

You can serve with marinara sauce, but we ate them plain and they were delicious!!
