Nachos

 

Talk about the need for easy...starting back to work has made it hard to cook dinner!!  I kind of forgot how challenging that can be.  So, the other night, we had baked nachos.  Michael didn't complain.  :)  Plus it's fun to use a piece of serving ware that I don't use often.  The Wilton stuff can go in the oven, so it's perfect for these.  Just spread the chips out, top with black beans and cooked meat (I used chorizo) and shredded cheese (I used a mexican blend of 3 cheeses).  Bake at 350 for about 10 minutes and then top with tomatoes and green oonions and cook another minute or 2.  Serve immediately.  Easy and good!
