Crustless quiche

2 tbsp butter
6 eggs
1/4 cup sundried tomatoes
1 cup spinach
1 cup cheddar cheese, shredded
Salt & pepper to taste
Preheat oven to 350. Place butter in pie plate & melt in oven. Once melted, swirl to coat pan. Whisk eggs until blended, then stir in spinach, sundried tomatoes, cheese & salt/pepper. Pour into buttered pan. Bake 30 mins or until a fork comes out clean in the center. (Mine was actually finished in about 25 mins)
This was so easy & tasted fine reheated the next morning.
