Apple Chips

This is a recipe we discovered last fall. We had been to Sky Top apple orchard on the way home from a camping trip (a really great place to go in the fall: http://www.skytoporchard.com/). We had more apples than we knew what to do with, so I searched for ways to use them. This was the best find! These apple chips are a great snack and are so easy to make.


2-3 Apples (the ones here are pink ladies, we also loved making these with Gala and Granny Smith apples, but you can use whatever kind you like best)

1 cup sugar

1 cup water



Cut apples VERY thin, about 1/16 inch (leaving skin on). The thinner you cut them, the better they crisp up. Dissolve the sugar in water and bring to a simmer in a medium saucepan. Put about 10 slices at a time in the sugar water for about 20 seconds each. Remove and lay on wire rack so excess liquid will drain off. Spray cookie sheet with PAM or coat lightly with vegetable oil. Lay apples in single layer over 2 baking sheets. Cook at 175 degrees for 2-2.5 hours.
