Christmas meal



We were in Mobile for Christmas, so I got to act as momma's sous chef instead of cooking everything. For Christmas lunch we had a yummy traditional Christmas meal. We had ham, mac and cheese, sweet potato souffle, green bean bundles, and sweet potato biscuits.

3 c. mashed, cooked sweet potatoes (about 2 lg. sweet potatoes, peeled)
1/4 c. brown sugar
3 tbsp. butter
4 eggs, beaten
1/4 c. orange juice
1/4 tsp. cinnamon

Preheat oven to 350 degrees. Combine mashed sweet potatoes with rest of ingredients. Beat well by hand or with electric mixer. Fold into buttered 2- quart baking dish. Bake for 45 to 50 minutes or until a knife inserted into center comes out clean and top is firm and golden.

For the green bean bundles:
whole green beans (canned or frozen-if using frozen cook half way in microwave)
brown sugar-about 1/2 a cup
2 tsp dry mustard
bacon slices, raw

Divide green beans into bundles of 5 or 6 and wrap each with 1/3 slice raw bacon. Lay bundles in a pan and sprinkle brown sugar and dry mustard over them. Bake at 350 for 30 minutes.

Sweet potato biscuits
Take one small sweet potato, cook and smash. Add mixture to a biscuit batter as you add the milk.
2 cups self rising flour
3 heaping tablespoons of mayonnaise
1 cup milk.
Mix the sweet potato, milk and mayo together. Add to the flour. This will be sticky. Turn out onto a floured sheet of waxed paper. Roll the dough mixture several times onto the flour. Roll out to about 1/2 inch thick and cut into biscuits. Bake at 450 for 10-12 minutes.
