Sausage & Cheese Grits Casserole

This is a terrible photo, but oh well. We love breakfast in our house. I can never make things liek this for the two of us, but whenever we have company, I love to make breakfast things that are different. We also had this for Mother's Day brunch this past year. This was a hit!
4 cups water
1 cup quick grits
1 lb sausage, browned
1/4 cup butter
1 tsp salt
4 eggs, lightly beaten
1 cup milk, slightly under a cup works better-maybe even 3/4 a cup
1 1/2 cup (6 oz) grated sharp cheddar cheese

Grease 3 qt baking dish, set aside. Bring water and salt to boil in large saucepan. Slowly stir in grits, cook 4-5 minutes, stirring occasionally. Remove from heat. Stir small amount of grits mixture into eggs. Return all to saucepan. Add sausage, 1 cup of the cheese, milk, and butter. Blend well. Pour into prepared baking dish. Sprinkle with remaining 1/2 cup cheese. Bake 1 hour or until golden brown. Let cool 10 minutes. Makes 8 servings.
