Honey Ginger Glazed Mahi Mahi

This is a bad picture because it looks burnt, but it's just the glaze that's dark. I think this would have been better over the rice so that the rice could absorb some of the delicious sauce. Overall, a keeper! Also, I halved this and it was perfect, but I am listing the full recipe.

3 Tbsp honey
3 Tbsp soy sauce
3 Tbsp balsamic vinegar
1 tsp grated frsh ginger root
1 clove garlic, crushed
2 tsp olive oil
4 (6 oz) mahi filets
1 Tbsp veg. oil

In a shallow glass dish, stir together first 6 ingredients. Place fish in the dish (I used filets without skin, but if you use them with skin on one side, place the skin side down). Cover and refrigerate 20 minutes. Heat vegetable oil in large skillet over medium high heat. Remove fish from dish, reserving marinade. Fry for 4-6 minutes on each side, turning only once. Remove and keep warm. Add reserved marinade to skillet and heat over medium heat until reduced to a glaze consistency. Spoon glaze over fish and serve immediately.

We had this with rice and steamed broccoli. I bought a new rice cooker this year and it also steams vegetables. It's awesome. It made the broccoli and I will never steam anything without this again! Totally a must have kitchen item: http://www.cuisinartwebstore.com/detail/CUI+CRC-400.
