Grilled Mahi Mahi Fish Tacos


I am trying to be better about not being wasteful with food. So, after making the burgers with the pickled red onions, I decided to make something else to use them with. I had one mahi filet, so perfect. For the fish, I made a marinade with
lime juice
fresh cilantro, chopped
one chiptole pepper (from the burger recipe), chopped
5 spice powder
I let it marinade about 20 minutes and then grilled it. Also, grill the tortillas about 2 minutes on each side.
Assemble with cut up fish, jalapenos, lettuce, pickled red onions and enjoy. We liked this simple dinner and Michael even ate the red onions this time and saw what hed been missing.
