Great use of leftovers


When I was in high school, this was one of my favorite thing to have for lunch when we had leftover rice. Fried rice is a million times better when you have day old (or 2-3 day old) rice. We had some leftover grilled chicken, so I chopped it up. I also chopped up some onion and green onion. I cooked (but make sure they aren't too soft) some peas and scrambled an egg. Put a little bit of sesame oil in the pan, and add the rice. Cook the rice in the oil for about 2 minutes before adding the rest. Add all the rest (if using green onions, wait a bit on them so they don't get too soft) and cook, stirring often. Enjoy!
