the summer garden


Our garden (and Michael's parents garden) has been producing like crazy, so I am looking for ways to use up the tomatoes and cucumbers. I made salsa the other day (find it on an earlier post under appetizers). Last night I boiled some pasta and tossed it with a cut up tomato, cucumber, some balsamic vinegar, a little mozzarella cheese, and a little parmesan cheese. We ate it cold along side grilled chicken. I'll enjoy it for lunch this week too. A good, easy, cold summer pasta.
