Strawberry Bread


3 cups all purpose flour
1 tsp soda
1/2 tsp salt
1 Tbsp cinnamon
2 cups sugar
3 eggs, slightly beaten
1 cup vegetable oil
20 oz frozen strawberries*
Combine the first 5 ingredients. Combine the last 3 ingredients in a blender and bledn to make a smooth liquid. Mix wet ingredients into dry ingredients. Pour into 2 greased loaf pans. Bake at 350 for 55 minutes to an hour.

I got this recipe from my mother-in-law and it's one of Michael's favorite treats. She uses 2 10 oz packages of Birdseye Lite strawberries. I use whole frozen strawberries that are not frozen in juice. Her's is a little sweeter, but it's great both ways. We love this as a breakfast treat and sometimes eat it as dessert (with a scoop of Blue Bell Homemade Vanilla). And, it makes two loaves, so you always get one for you and one to give away.
