Sweet Potato Chips

I'm kind of embarrassed to admit that I own a deep fryer (ok, really embarrassed). In my defense, it was a wedding present and I decided to keep it, because, you never know...

Well, it's so perfect for making wing chips, french fries, and these-sweet potato chips. One sweet potato makes plenty for two people. All you do is slice it up really thin (as thin as you can). You heat the oil in the fryer and put about 10-15 of the slices in the hot oil at a time. Let cook until they crisp up and start to brown, just a few minutes. Drain on paper towels and sprinkle with sea salt. Enjoy alongside a burger or sandwich.
