This is one of the first things I would make when I got started in the kitchen. It's easy and was one of the first things that I just tried to make with no recipe. So, I will attempt to write this down...
1 boneless skinless chicken breast
salt and pepper
self rising flour
1 egg
a little milk (about 1 Tbsp)
red pepper flakes
self-rising flour
heavy whipping cream
butter
parmesan cheese
angel hair pasta
olive oil
Cut the chicken into chunks and pat dry with paper towels. Season with salt and pepper. Heat olive oil in a pan. Beat egg with milk. Dip chicken in egg and then dredge in flour. Cook in oil until browned and cooked through. Cook angel hair pasta. Remove chicken from pan and wipe out pan with paper towel. Turn temperature down to low and melt butter in pan. Add chicken back and add heavy cream, parmesan cheese, and red pepper flakes. Allow sauce to thicken, just about a minute or two and serve over pasta.
I also like this with artichoke hearts in it, but Michael doesn't so I just left them out.

this looks delicious! about how much butter and heavy cream do you use for the sauce?
ReplyDeleteI eyeball it. But usually about 2-3 Tbsp butter and then just pour the cream until its the right thickness. Maybe 1/4 cup?
