Going Away Party for Parks


On Friday night, my cute sister hosted a Going Away Party for her boyfriend, Parks.  He's leaving for a 9 month deployment to Afghanistan.  We just had lots of appetizers and some of them were really yummy!  I've put some on separate posts, but thought I would include this one here.


Buffalo Chicken Dip
4 oz reduced fat cream cheese, softened
1 cup fat free sour cream
1/2 cup Franks hot sauce
1/2 cup sharp cheddar cheese, grated
*the recipe calls for crumbled blue cheese, but we are NOT blue cheese eaters
1 tsp white wine vinegar
2 cups cooked, shredded chicken

Mix the first 5 ingredients together until smooth.  Add chicken and place in crock pot on low for 3-4 hours.  Serve warm.

This was good, and would be great for a tailgate.  I thought it could use some more heat though, so if I make it again, I will up the amount of hot sauce.

We also had tomato tarts, pizza puffs, a Mexican layer dip, a bean and corn salsa, and some sweets.
