Jalapeño Lime Grouper

The grouper fillets I bought were tiny, so we had two a piece, which was the serving size. We had a salad, peas, and these amazing grits from the Parks Mill in Abingdon, VA. Adam and Susan introduced us to Parks Mill, a great BBQ place when we visited them this weekend and they also have an old mill-we couldn't pass up the stone grits!

Cooking spray
1.5 Tbsp chopped cilantro
1 Tbsp fresh lime juice
1 Tbsp chopped jalapeño pepper
1 Tbsp grated ginger
3/4 tsp minced garlic
2 grouper fillets (about 3/4 pound-which for us was the 4 little pieces)
1/2 tsp salt
1/4 tsp pepper

Combine cilantro and next 4 ingredients. Sprinkle fish with salt and pepper. Spray grill with cooking spray. Grill fish about 6 minutes on each side over Medium-High heat. Spread cilantro mix on one side of fish about 2 minutes before finished cooking. Serve with Mango relish.

Mango Relish
1 fresh mango, diced
1/4 cup diced red onion
1/2 cup diced red pepper
1/2 cup chopped fresh basil
1 Tbsp honey
1 Tbsp fresh lime juice
1/4 tsp salt (I use sea salt)

Combine above ingredients. Makes about 2 cups-would be plenty for four servings of the above fish.
