Men's Health Chicken Sandwich


2 boneless skinless chicken breasts

*I cut the tender off and the bottom, so it better sized to fit on the bun and I think it made a perfect sized sandwich

Teriyaki sauce

2 slices Monterrey jack cheese (or whatever you like best)

2 slices pineapple

2 kaiser rolls

thinly sliced red onion

1/2 jalapeño, thinly sliced



Marinate chicken in teriyaki sauce for at least 30 minutes (could be up to 12 hours). Grill chicken for about 5 minutes per side or until lightly charred and firm to the touch. Grill pineapple for about two minutes. Add cheese to chicken on grill so it melts. (I also grilled the buns for just a minute so they were toasted lightly). Top sandwiches with pineapple, onion, and jalapeño.



I came across this recipe while thumbing through Michael's Mens Health. We thought these were good! It was like a chicken sandwich you'd get at a restaurant. The heat of the jalapeño was balanced so well with the pineapple. For the kaiser rolls, I bought "Fresh Baked Sandwich Buns" from the Kroger bakery and they were delicious! They also make them in whole wheat but we are white bread lovers in the Long house. We had it with sweet potato fries and green peas.
