Boudro's guacamole


I am a little shocked that I have not posted this before. It's probably because I scarf it down before I can remember to take a photo. In May, Michael and I went to San Antonio for our friends' (Josh and Chelsea) wedding. While there we ate at Boudros Restaurant on the Riverwalk. It was a great meal and this appetizer is their specialty, so we had to order it. They make it right there at the table for you-it's that fresh. We didn't even think we liked avocado until this hit our mouths!



Boudro's Tableside Guacamole for 2

juice of 1/4 orange

juice of 1/2 lime

1 avocado, seeded, scooped out of skin

2 Tbsp charred Roma tomatoes (grape tomatoes work too, and that's what we've been using this summer because we have them in our garden)

1 serrano pepper, charred, seeded and diced (jalapeƱo works too)

1 Tbsp red onion, diced, 1 tsp chopped cilantro

sea salt to taste



Squeeze juices into bowl. Add avocado and coarsely chop. Add other ingredients except salt. Result should be crudely chopped, not mashed. Add salt to taste.



This is so fresh and delicious and it makes the perfect amount for an appetizer for 2 people. Grab a bag of Tostitos and enjoy!
