Grilled Orange Shrimp Kabobs

1/2 cup packed light brown sugar
1/2 Tbsp minced fresh ginger

1 tsp orange rind, grated

3/4 cup orange juice

1/4 cup orange liqueur

1/4 cup unsalted butter

1/8 tsp salt

1/8 tsp pepper

1 lb large shrimp

olive oil



Combine first 5 ingredients in a sauce pan and boil on medium for 15-20 minutes until slightly thickened, whisking often. Whisk in butter one Tbsp at a time. Add salt and pepper and remove from heat. While making sauce, peel and devein shrimp, leaving the tails on. Thread shrimp on skewers and brush with olive oil. Grill, covered over medium heat about 3 minutes on each side. Serve with orange sauce and rice.



I think steamed broccoli would have also gone really well with this. There was enough for 3 of us.
