Tostados


Large flour tortilla
one chicken breast with Mojo marinade

Refried beans

green Chile pepper (or jalapeño)

chopped red onion

shredded iceberg lettuce

salsa

ear of corn (rub with a little oil, sprinkle with Chile powder, salt, and pepper)

grated cheese (pepper jack is what we used this time)



Grill chicken and corn. Cut up. Grill tortilla over low heat until slightly crispy (about 3 minutes). Layer ingredients starting with refried beans. This was a vegetarian recipe that I added chicken to. Yum!
