Send the man to the meat market and...


He comes home with ALLIGATOR meat and asks you to cook it. Now, I love a challenge in the kitchen from time to time, but my thought was I am not from the backwoods, I don't eat alligator. He proceeded to let me know that the butcher told him to just buy a box of Zatarin's and cook it with it. The meat is made into sausage (and pork is added to fatten it up-alligator is lean, who knew?) We made it into jambalaya. I hate making something from a box, but this wasn't bad. Good amount of spices. And now the alligator-it was actually good. Just like a sausage, but a little sweeter. It wasn't overly chewy like I was fearful of it being. The Zatarin's box said to use a pound of meat. I only used half of that and I thought it was good. We had it with broccoli cornbread, from a previous post. So, if you haven't cooked up alligator and you are curious-the sausage route is a great place to start.

It should be noted that Michael also came home from the meat market with filets...the alligator note was a side purchase. :)
