2 Tbsp olive oil
1 small onion, chopped fine
2 minced garlic cloves
1 lb green beans, ends trimmed
3/4 cup canned diced tomatoes
1 Tbsp minced fresh basil
salt and pepper
Heat oil in 12 inch skillet over medium heat, add onion and cook. Add garlic and cook until fragrant (30 seconds). Add beans and tomatoes. Cover and reduce heat to low and simmer about 20 minutes (until beans are tender). Sprinkle with basil and season with salt and pepper.
We had these with pork tenderloin and stovetop mac and cheese. I made the mac and cheese with white cheddar with jalapenos in it to change it up and it was good!
